Sticky Date Pudding:

Cake:
1 ½ Cup Chopped dried dates
1 ½ Cup Boiling water
1 Cup Brown Rice flour
2 Eggs
½ Teaspoon Baking Powder
1 Teaspoon Bicarbonate of soda
3 Teaspoons vanilla extract
2 T Honey
70g Coconut oil
Pinch of salt

Sauce:
1 Cup Chopped dates
¼ Cup nut butter
1 Cup coconut cream
2 Tablespoons Vanilla extract
1 Teaspoon ground cinnamon
¼ Cup hot water
3 Tablespoons honey
Pinch of salt

Method:

Pre-heat the oven to 180 degrees Celsius
Place the chopped dates and hot water in a bowl and soak the dates for 10 minutes until soft
Whilst the dates are soaking grease 6 big cupcake molds
Place the soaked dates along with all the other ingredients into a blender and blitz until smooth.
Pour the batter into the cupcake molds and bake for 30 minutes
While the cakes are baking add all the sauce ingredients into the blender and blitz until smooth.
Pour the sauce into a pot and heat gently in the stove top
Once the cakes are cooked remove from the oven and tip out of the molds.
Top with the sticky date sauce and decorate with the toasted nuts and gold dust
Enjoy warm!
