A Festive Christmas Caviar Entrée

This time last year, we shared this borderline absurd Seven(ish) Fishes Christmas Dish. The tradition continues today with a fish-forward festive snack that can be served as a fancy Christmas canapé. I once saw these sour cream and caviar potato chips in the New York Times and I have been dying to try them out ever since.


Well, Woolworths obliged and started stocking all manner of fantastic fish products on their shelves this year, including trout roe. You might think that a luxury ingredient like caviar is wasted on the humble potato chip, but you would be wrong. They were made to be together, like all fish and chips.






What you'll need from the shops


  • Potato chips — I would recommend plain sea salt or sour cream and onion, as anything stronger would overpower the caviar. A thicker cut would do well to hold up the sour cream and caviar

  • Spoonable sour cream or créme fraîche

  • Fresh lemon or lime

  • A herb of your choice — dill looks beautiful, but chives would also suit



How to assemble this Christmas caviar canapé


Assembly is the name of the game here. Finely chop your herb of choice and combine it with your sour cream or créme fraîche in a bowl with a small squeeze of citrus juice. Be sure to taste everything as you go.


The caviar and potato chips are already very salty, so I wouldn't recommend seasoning the cream.



Simply spoon a little bit of sour cream onto each potato chip, followed by a little caviar. You can toy around with the ratio depending on how many hors d'oeuvres you're trying to make but, if taste is important, I would recommend less cream and more caviar.



A dainty dill spring goes a long way in adding a complimentary anise-like contrast to the briny caviar, and it has the additional bonus of resembling an exceptionally delicate sea coral. Merry fishmas, as they say.
